Lemon Meltaway Cookies

I timed the release of this post toward the end of spring, beginning of summer as these treats are perfect for this time of year (though they can be enjoyed anytime you want to satiate your lemon flavor craving) as they're light, citrusy and will almost quite literally melt-in-your-mouth.


You don't need to be a master baker to recreate this recipe, though you'll need some patience as the recipe calls for chilling the prepared cookie dough for one to two hours, but trust me, the wait time is definitely well worth it. Ingredients


Ingredients for lemon meltaway cookies including all-purpose flour, cornstarch, lemon zest, lemon juice, powdered confectioners sugar, unsalted butter

To prepare the cookie dough you’ll need:


Lemon Juice - 1 Tablespoon


Lemon Zest (finely grated) - 1 Teaspoon


All-Purpose Flour - 1 1/4 cup (152 grams)


Unsalted Butter - 1 1/2 sticks (170 grams) - softened


Cornstarch - 1/2 cup (65 grams)


Confectioners (Powdered) Sugar - 1/3 cup (42 grams)



Ingredients for lemon glaze for cookies unsalted butter, powdered confectioners sugar, lemon zest and lemon juice

To prepare the lemon frosting you’ll need:


Lemon Juice - 1 Tablespoon plus 1 Teaspoon


Lemon Zest (finely grated) - 1 Teaspoon


Unsalted Butter - 1 stick (113 grams) - softened


Confectioners (Powdered) Sugar - 1 1/2 cups (170 grams)



Equipment

Most of the items listed below are common kitchen tools you'll likely have on hand. For those of you who are familiar with some of my other posts, you'll notice most of these items reappear frequently, as they can be used in several cooking and baking recipes. With proper care, the items featured below will make your cooking and baking experiences easier, enjoyable and will last you many years --- and recipes --- to come.

  1. 1.5 quart mixing bowl - I have a few Pyrex mixing bowls on hand as they're sturdy safe in the oven, microwave, refrigerator, freezer, and dishwasher. They also make for great storage containers.

  2. Cooling rack - Here's another item I keep a few of on hand as they're not only great for cooling cakes, pies, cookies and other baked goods, but when placed inside a rimmed baking sheet, it allows for more air circulation which makes foods much crispier than just laying flat on a baking sheet.

  3. This adjustable measuring spoon by KitchenArt is one of my favorite go-to kitchen tools as its space-saving design, removes the need for multiple measuring spoons as it adjusts to measurements of 1/2 tsp. up to 1 full tablespoon.

  4. A half baking sheet is my go-to standard size for cookie baking and I keep a couple of these on hand to rotate between baking batches.

  5. Silicone spatula - I like using spatulas with a seamless design such as the one pictured above as there are no seams or cracks to trap food, which means these cooking spatulas clean up easily. Most silicone spatulas are also heat resistant and can withstand temperatures above 400°F.

  6. Measuring cups - Yes, this product is another Pyrex brand and for good reason. These cups are another versatile kitchen tool to stock up on as they yield precise measurements, especially when compared against other well known brands and they come in an array of sizes from 1 to 4 cup capacity.

  7. Kitchen scale - In most of my recipes, I include measurements by volume and weight. Weighed measurements are the most accurate and is what professional bakers use, so if baking is a passion for you, I highly recommend you get the Escali food scale as the price point can't be beat; it yields precise measurements; is compact in size; comes in an array of fun colors to choose from; has a capacity to hold up to 11 pounds (5,000 grams) and provides weight readings in 0.05 ounces (1 gram) increments using the following units: Ounces, pounds and grams.


Method

To prepare the cookie dough:

  1. Pour 1 tablespoon lemon juice in small bowl.

  2. Add 1 teaspoon finely grated lemon zest to bowl and stir to combine. Set aside small bowl for approximately 15 minutes.

  3. Attach flat beater to stand mixer and add 1 1/4 cups of flour to the stand mixer bowl.

  4. Add 1 1/2 sticks butter to the bowl.

5. Add 1/2 cup cornstarch.

6. Add 1/3 confectioners sugar.

7. Pour lemon juice/zest mixture to the bowl.

8. Set mixer speed to low and beat until all ingredients are thoroughly

combined (approximately one minute).

9. Transfer cookie dough to parchment paper.

10. Shape dough into a log (approximately 10 x 2 inches).

11. Wrap log of cookie dough with parchment paper and twist ends. Place

log in refrigerator and chill cookie dough for 1 -2 hours.

12. Pre-heat oven to 350°F. Remove log from refrigerator and slice cookie

dough into 1/4 inch slices.

13. Place cookie dough slices about 2 inches apart on prepared baking

sheet (lined with parchment paper or silicone baking mat). Bake cookies

for 9-12 minutes (color will remain relatively the same once cookies are set).

14. Remove cookies from the oven and transfer to a cooling rack and

allow cookies to cool.



To prepare the frosting:


15. Pour 1 tablespoon plus 1 teaspoon lemon juice in small bowl.

16. Add 1 teaspoon finely grated lemon zest to bowl and stir to combine.

Set aside small bowl for approximately 15 minutes.

17. Using a clean mixing bowl & flat beater attachment, add 1 stick butter

to the bowl. Set mixer to medium speed and beat for one minute.

18. Add 1 1/2 cups confectioners sugar. Set mixer to low and beat until

butter and sugar are thoroughly combined (approximately 30 seconds)

and increase speed to medium and beat for another 30 seconds.

19. Pour lemon juice/zest mixture to the bowl. Set mixer to low speed and

beat until all ingredients are combined (approximately 30 seconds). Scrape

sides of bowl using silicone/rubber spatula. Beat on medium speed for

30 seconds.

20. Frosting will look smooth and fluffy once completely mixed.

21. Using a small offset spatula (you could also use the back of a spoon

or butter knife) spread a thin layer of frosting on each cookie.
